Does anyone know if it would be possible to add a cc1101 transceiver and a pn532 to the same m5stick and how would this be done?

All advice is appreciated!

You just need to make sure the modules use different communication protocols or assign different pins if they're both using something like SPI. The CC1101 typically uses SPI, and the PN532 can use I2C or SPI—so setting the PN532 to I2C might make things easier.

Check the pinouts and consider using an expansion board. With the right firmware, you can get both the CC1101 and PN532 working together.
